Cheesy Chicken Marinara Bake Serves: 4–6 Ingredients * 1 medium spaghetti squash * 1 cup water * 2 teaspoons onion powder * 2 teaspoons garlic powder * Salt and pepper, to taste * 1 (12.5-ounce) can white chicken, drained * 1 tablespoon Italian seasoning * 1 (24-ounce) jar roasted garlic marinara sauce * 1 (16-ounce) bag shredded mozzarella cheese, divided * Olive oil spray For the toasted bread * Ciabatta or baguette, sliced * Olive oil spray * Italian seasoning * Pinch of sea salt Instructions 1. Pierce the spaghetti squash 10–15 times with a fork or paring knife. Place it whole into a slow cooker with 1 cup of water. Cook on High for about 3 hours or Low for about 5 hours, until tender. 2. Carefully remove the squash, let it cool slightly, then cut it in half lengthwise. Scoop out and discard the seeds, then scrape the squash into a large bowl with a fork. 3. Season the squash with the onion powder, garlic powder, salt, and pepper. 4. In a separate bowl, mix the drained chicken with the Italian seasoning. Add it to the spaghetti squash. 5. Add the entire jar of marinara sauce and about 12 ounces (¾ of the bag) of mozzarella cheese. Reserve the remaining cheese for the topping. Stir until everything is well combined. 6. Spray either two 8×8-inch baking dishes or one larger casserole dish with olive oil spray. Spread the mixture evenly into the dish. 7. Bake at 375°F for 20–25 minutes, or until hot and bubbling. 8. Remove from the oven and sprinkle the remaining mozzarella over the top. Switch the oven to Low Broil. 9. While the cheese is browning, place sliced ciabatta or baguette on a baking sheet. Lightly spray with olive oil and sprinkle with Italian seasoning and a pinch of sea salt. 10. Broil both the casserole and the bread for about 3 minutes, watching closely since both can brown quickly. 11. Let the casserole rest for about 5 minutes before serving. Serve with the toasted bread for dipping into the extra marinara and melted cheese. This is one of those recipes that tastes even better the next day, making it perfect for meal prep or leftovers.
