@everyday_bakes: I’m ready for Fall 🍂 Cinnamon streusel muffins Muffin Batter * 1/2 cup Unsalted Butter, room temperature (I used oil) * 1 cup Granulated Sugar * 2 Large Eggs * 1 tsp Vanilla Extract * 3/4 TB Cinnamon * 2 cups AP Flour * 1/2 tsp Kosher Salt * 2 tsp Baking Powder * 1/2 cup Whole Milk For the topping: - 1/2 cup all-purpose flour - 1/4 cup packed brown sugar - 1/2 teaspoon cinnamon pinch salt - 3 tablespoons cold unsalted butter cut into small pieces Glaze * 4 oz Cream Cheese * 1 cup Powdered Sugar * 1 TB Milk Batter and Baking 1. Preheat oven to 350F. Line a 12-cup muffin tin with paper liners and baking spray. 2. In a bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugar. 3. Add in eggs, vanilla and cinnamon, baking powder, and salt. 4. Scrape down the sides of the bowl, then add in flour while alternating adding in milk. 5. Using a large ice cream scoop, scoop batter into prepared muffin tin. 6. Cover batter with the streusel topping, lightly pressing it into the batter. 7. Bake for 25 minutes, or until a knife comes out clean in the center of a muffin. 8. Once cooled, drizzle the glaze over each muffin. #fallbakingrecipes #fallbaking #autumnbaking #autumn #baketok
