Farmer Chris 71 :
I grew up with blanching the corn on the cob but your way looks like a lot quicker! Thank you for sharing your recipe! We are in MN and we love doing this!

My recipe is definitely more complicated but also very good. I add butter and heavy whipping cream after you cut everything off the cob. Salt and pepper and a little sugar. Bake in the oven in a covered casserole dish for 30-45 min at 350°. Cool and bag. It’s the perfect creamed corn!

we blanch the corn on the cob using our turkey fryer. cool. cut the corn off using a corn cutter that does the whole cob at once. bag and freeze flat. to eat, thaw, add butter, sugar, salt and pepper to the pan. just warm up and ready to eat.

We used to scrape the cob after cutting corn off to get the corn milk then proceeded with the rest.

You don’t scrape the corn cob? That’s part of the best part that makes it sweeter.

Yes, this is about identical to how our family does it. It doesn't get overcooked before you freeze it, and it is so nice to cut the corn off the cob before cooking it.
