@hagee.eats: Cooking is a love language ❤️👩🏽🍳 1/2 lb rigatoni 2 tablespoons olive oil 1/2 onion, finely diced 4 cloves garlic, minced 2 tablespoons Calabrian chili flakes 6 oz tomato paste 1/2 cup vodka 1 cup heavy cream 1/2 teaspoon sugar (optional, to balance the acidity) 1/4 cup reserved pasta water 1 tablespoon butter 1 tablespoon freshly grated Parmesan cheese Salt, to taste Black pepper, to taste Directions Bring a large pot of generously salted water to a boil. Cook the rigatoni according to the package directions until al dente. Before draining, reserve 1/4 cup of the pasta water. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3–4 minutes, or until softened and translucent. Stir in the garlic and Calabrian chili flakes, cooking for about 1 minute until fragrant. Add the tomato paste and cook for 2–3 minutes, stirring frequently, until it darkens slightly and becomes rich in color. Pour in the vodka and let it simmer for 1–2 minutes to cook off the alcohol. Reduce the heat to medium-low and stir in the heavy cream until the sauce is smooth and well combined. Add the reserved pasta water, sugar, butter, and Parmesan cheese. Stir until the butter has melted and the sauce becomes creamy. Season with salt and black pepper to taste. Add the cooked rigatoni to the skillet and toss until every piece is coated in the sauce. If the sauce becomes too thick, add a splash of additional pasta water until it reaches your desired consistency.
