Im a trained German baker who’s currently in master school, I’m bored so I’m just gonna info dump for those interested. here there’s kind of a little beef going on between Swabia and Bavaria where bavarians belief it’s supposed to represent praying hands of a monk (crossed hands over the chest) or the Swabian story he told, I personally believe the Bavarian story is true because it evolved out of ancient ring-bread which was a staple of Christian supper. (Also the word „pretzel“ comes from the Latin word „brachium“ which means „arm“) but the typical taste and colour comes from an oversight of the baker Anton Nepomuk Pfannenbrenner. He was responsible for breakfast in the royal coffee house of the court supplier Johann Eilles. However, in February 1839, he made a serious mistake. He usually glazed his pretzel with sugar water. Without realizing it, he reached into the lye. This was ready for cleaning the baking sheets. But the result was convincing. And so the messenger Wilhelm Eugen von Ursingen was the first person to be allowed to taste a lye pretzel.

I'm from Swabia but I now live on the border with Alsace, France and they claim the pretzel as their own. For them it's a matter of cultural pride & they see the pretzel as a symbol of their baking tradition.

Ich komme aus einem Nachbarort von Altenriet, welche als Geburtsort der Brezel gilt, zumindest findet dort das alljährliche Brezelfest statt. Egal ob sie nun aus Bad Urach oder Altenriet stammt, die schwäbische Brezel ist die beste in der Welt 😁
