Perhaps my new favorite stuffed peppers- Pizza Stuffed Peppers Ingredients: * 3 large green bell peppers, halved lengthwise with seeds and membrane removed * 1 lb lean ground turkey * 1 small onion, diced * 2 cloves garlic, minced * 1 teaspoon Italian seasoning * ½ teaspoon garlic powder * Salt and black pepper, to taste * 1½ cups red pasta sauce * 2 cups shredded mozzarella cheese * 24–30 turkey pepperoni slices * Optional: fresh basil garnish Instructions: 1. Preheat your oven to 400°F. Line a 9x13-inch baking dish with parchment or tinfoil. 2. Arrange the pepper halves cut-side up in the baking dish. Spray with olive oil and sprinkle on salt and pepper. Bake for 10 minutes to slightly soften them while you prepare the filling. 3. Meanwhile, heat a large skillet over medium heat. Cook the ground turkey and onion until the turkey is browned and cooked through. Stir in the garlic and cook for another 30 seconds. 4. Season with the Italian seasoning, garlic powder, salt, and pepper. Stir in the pasta sauce and simmer for 2–3 minutes until everything is well combined. 5. Spoon the turkey mixture evenly into each pepper half. 6. Sprinkle generously with shredded mozzarella, then arrange 4–5 turkey pepperoni slices over the cheese on each pepper. 7. Bake 15-20 minutes or until the peppers are tender and the cheese is melted and bubbly. 8. Let cool for 5 minutes before serving.
