Nigerian Gizdodo 🇳🇬🇳🇬🇳🇬 Ingredients “Meat” - 2 Juicy Marbles steaks - ½ tsp Nigerian curry powder - ½ tsp dried thyme - ½ tsp smoked paprika - ½ tsp garlic powder - ¼ tsp black pepper - ½ vegetable stock cube, crumbled - Oil for shallow frying Plantain - 2 large ripe plantain - Pinch of salt Pepper Sauce - 3 medium tomatoes - ½ red bell pepper - 1 Scotch bonnet, adjust to your heat preference 😉 - ½ large onion - 2 garlic cloves - 1 red onion, diced - 1 tbsp tomato purée - ½ tsp Nigerian curry powder - ½ tsp dried thyme - ½ tsp all purpose seasoning - 125ml vegetable stock - 1 tbsp oil - Salt, to taste To Finish - ½ orange bell pepper, diced - ½ yellow bell pepper, diced - 2 spring onions, sliced Method 1. Blend the tomatoes, red pepper, Scotch bonnet, ½ onion and garlic until smooth. 2. Pull the Juicy Marbles into chunky pieces. Season with curry powder, thyme, smoked paprika, garlic powder, black pepper and stock cube. Sear in oil for 4–6 minutes until nicely browned, then set aside. 3. Cut the plantain into chunks, fry until golden and caramelised. Set aside. 4. Fry the diced onion for 2 minutes, add the tomato purée and cook for another minute. 5. Add the blended pepper mixture, curry powder, thyme and stock cube. Cook for 8–10 minutes until reduced, rich and glossy. 6. Pour in the vegetable stock to loosen the sauce. Add the diced peppers and cook for 1–2 minutes. 7. Add the seared Juicy Marbles and fried plantain. Toss everything through the sauce and cook together for another 2–3 minutes. 8.
