as a teenager I worked at a vietnamese restaurant, and instead of coffee every morning, I had a mug of pho broth every morning. there is nothing on this earth as delicious as pho broth.

He is completely correct. The first boiling is stock. Sure could use for soup but for pho you want the long second boiling. French word is REMOUILLAGE. The bones literally start to dissolve at about 12 hours and the liquid becomes creamy and rich. Full points on this posting.

The amount of people that don't understand "first boil to remove the impurities" which is a staple of Asian culture and cuisine really shows...
For those that want a complete explanation: The scum is removed to prevent off or gamey flavors from getting into the meat and final broth (which orignates from the usage of wild game in the recipes), and the meat is removed before a lot of the collagen and fat in the beef amd bones have rendered. Now that the impurities and scum (which comes from the blood/seem in the bones and meat) have been removed, you are left with boiling pure collagen. This helps the broth have a much cleaner depth of flavor with lots of collagen and less pure fats. The collagen then has the opportunity to simmer with the spices and create a rich cohesive broth without the usually fatty film.
Think of it more as blanching to maintain purity over wasting.
To be fair however, this is one of many ways to make pho as close to traditionally as possible as some do simply boil, spice, aromatic, then simmer. Skipping the blanching process all together.
