Day 6 Daniel Fast Dinner Recipe  • As per the Daniel Fast, no dairy and no meat—which is a staple in Mexican food recipes. So this was a hard one, but let me tell you, it was delicious.  • First, bake 4 poblanos, 2 jalapeños, and 4 cloves of garlic. You’ll place the oven at 400 degrees. After 10 minutes remove the garlic and jalapeños. Let the poblanos bake for about 25 minutes total, until the skin begins to bubble on the poblanos. Once your remove the poblanos from the oven, place them in a plastic bag and allow them to steam for 10-15 minutes. Once you remove them from the bag, you will peel off the skin and deseed them.  • While the poblano peppers are cooking, cut off the kernels from four corn cobs. You can also just use canned corn if that’s easier.  Dice the jalapeños and garlic.  • Bring 4 cups of vegetable broth to a boil. Add in the poblano peppers, 3/4 of the corn, jalapeños, and garlic. Add one cup coconut milk and allow the ingredients to boil.  • You will season the soup by adding 2 tsps cumin, 2 tsps salt, 1 tsp black pepper. Feel free to add any other seasonings you like.  • In addition, you can add either 30 ounces of hominy or 2 cans of cannellini beans. I added just the hominy.  • Allow the soup to boil for about 25 minutes to allow the veggies to absorb the seasonings.  • Once everything is done, add cilantro, corn, and lime juice to the soup 🥣 and enjoy!
