Season the chicken generously with Cajun seasoning, garlic powder, and onion powder. Brown the chicken in batches until golden on both sides. Remove and set aside. 2. In the same pot, sauté the onions and bell peppers until softened, about 8–10 minutes. Season lightly with Cajun seasoning. 3. Add the chicken stock, water, and roux. Whisk until the roux is completely dissolved. 4. Bring to a gentle boil, then reduce to a simmer. Cook for 1–2 hours, stirring occasionally. 5. Add the browned chicken, drumsticks, and sliced sausage. Continue simmering on low for 1½–2 hours, or until the drumsticks are fall-off-the-bone tender. 6. Remove the drumsticks, pull the meat from the bones, discard the bones and skin, then return the shredded meat to the pot. 7. Taste and adjust the seasoning with additional Cajun seasoning, garlic powder, onion powder, or salt if needed. 8.
