This is probably one of my favorite meals at camp and at home! Recipe: Korean Grilled Pork Belly with Stir Fried Kimchi (Samgyeopsal) * 2 lbs pork belly strips, about 1/4 inch thick * Kosher salt, to taste * Black pepper, to taste * 1 cup garlic, peeled whole cloves * 1 cup kimchi, chopped, preferably aged kimchi  * 1 tbsp Gochujang * 1/2 tbsp Gochugaru, coarse red pepper paste  * 1/2 tbsp soy sauce  * 1/2 tbsp sugar  * 1 tsp sesame oil Optional to serve— * Lettuce, cleaned and whole leaves * Perilla leaves, cleaned  * Korean peppers, whole or chopped into bite sized pieces * Ssamjang  1. Lightly score pork belly at a diagonal all along the strip. Once finished, score diagonally again going the other direction, making small diamond shaped cuts along the strip. Flip over and repeat on the other side. Lightly salt and pepper scored pork belly.  2. On a hot griddle or pan grill pork belly on both sides until golden and crispy. Cut into bit size pieces with scissors. Fully cook through until desired readiness. 3. Add whole garlic cloves to the center of the pork belly (in the rendered pork fat) and cook until soft and buttery. About 3-4 mins.  4. Add kimchi— whole or chopping into bite sized pieces will work.  5. Mix gochujang, gochugaru, soy sauce, sugar and sesame oil together.  6. Pour sauce over kimchi and mix until warmed through and kimchi is slightly cooked. 7. Once everything is cooked through, eat directly off the pan, wrapping one slice of pork belly, kimchi, and one garlic clove in lettuce and perilla leaves and dipped in ssamjang. enjoy!  #porkbelly #koreanfood #kimchi #grilled #mealideas  #camping #campingfood #campfood #campinglife
