Possibly one of the BEST burgers I’ve ever made. 🤤🍔 Two cheesy smash patties wrapped in caramelized Vidalia onion + my high-protein burger sauce. Messy, decadent and just over 300 calories with nearly 50g of protein?! YES PLEASE. 🍔 HIGH-PROTEIN, LOW-CALORIE ONION-WRAPPED SMASH BURGER Ingredients: * 1 large Vidalia onion, cut into ~¼-inch-thick discs (center-cut discs work best) * 6 oz 96/4 lean ground beef * 3 slices fat-free American cheese * Avocado oil spray * Salt + pepper * High-protein Greek yogurt burger sauce, for serving (recipe will be posted separately) Directions: 1. Slice the widest part of your Vidalia onion into ~¼-inch-thick discs, keeping the rings intact. You’ll need 2 large discs for one burger; save the rest for another recipe. 2. Lightly spray a skillet with avocado oil and heat over medium. Add onion discs and cook for several minutes per side until golden brown, caramelized and tender. Sprinkle with salt after flipping and lower the heat if needed to prevent burning. 3. Carefully transfer onions to a plate. TIP: The discs can be tricky to move while keeping the rings together—I found using 2 spatulas worked perfectly! 4. Divide 6 oz ground beef into two 3-oz portions and generously season with salt + pepper. 5. Turn the same skillet to high heat. Add beef, place a piece of parchment over each portion and use the bottom of a pot or heavy pan to smash each patty thin. Remove parchment. 6. Cook approximately 3–4 minutes per side, or until cooked through with a nice browned crust. Top each patty with a slice of cheese and allow to melt. 7. Assemble with one onion disc on the bottom, the remaining slice of cheese (it works like “glue”!), both cheesy smash patties and your second onion disc on top. 8. Serve immediately with my high-protein Greek yogurt burger sauce and prepare to get messy. 😂 This was SO decadent, cheesy and ridiculously delicious—you would NEVER guess it was a lower-calorie, high-protein burger!
