September is the best time to make corn chowder! The temps are dropping but corn is still in season, fresh and super sweet! Today I am making a Shrimp & Corn Chowder but I made this again Sunday with lobster and equally delicious! 🍤🌽 Shrimp & Corn Chowder Add shrimp shells, corn cobs, celery tops, green onion ends, 1/4 yellow onion, 2 garlic cloves, fresh herbs, bay leaf and peppercorns to a pot. Cover with water and simmer for 20-30 minutes. Cook four slices of bacon in a pan over medium heat until crispy. Drain bacon on a paper towel lined plate. Once cool, crumble the bacon and set aside. Melt butter in a large pot over medium heat. Add remaining 3/4 yellow onion, diced and 3 chopped celery stalks and saute for 5 minutes, or until soft. Add garlic and cook for 1 more minute. Add 3 tbsp flour, 2 tsp old bay seasoning, 1/2 tsp black pepper and a pinch of salt, and stir to combine. Cook for 3-4 minutes to cook out the raw flour taste. Strain the stock into the pot. Scape up brown bits from the bottom of the pan and stir to combine flour with liquid. Add 1 large diced potato and 2 cups (3-4 ears) of corn. Bring soup to a simmer and cook until the potatoes are soft, about 10 minutes. Optional: Blend some of the soup for a thicker consistency. Add 1lb raw shrimp and 1 cup heavy cream. Gently simmer the soup until shrimp are cooked. Stir in crumbled bacon. Ladle soup into bowls and garnish with chopped scallions. #fyp #foryoupage #cornchowder #soupseason #chowder
