i guess it is a bit of fruit and granola at the end of the day (for the lemon matcha chia pudding) you’ll need: - 1tsp pure matcha powder  - 50ml warm water  - zest of 1/2 a lemon  - a generous squeeze of lemon juice (a little less than half of the lemon!) - 50ml any milk  - 1 heaped tbsp greek yogurt  - 1.5tbsp chia seeds  - 1tbsp honey   (for the granola) - 1/3 cup oats  - 1 small knob of butter  - 2tbsp honey / maple syrup (to serve) - any yogurt you like! - a handful of fresh / frozen blueberries - fresh strawberries, sliced - any nut butter (i use crunchy peanut!)  - flaked coconut  method: 1. begin by whisking the matcha powder along with the warm water until silky smooth (preferably use a matcha whisk!). 2. add in the lemon zest, lemon juice, milk, yogurt, honey and chia seeds and mix until throughly combined. 3. pop in the fridge for at least 30 mins whilst you get on with the rest. 4. in a small frying pan, toss in the oats, butter and honey (or maple syrup if using) and begin to toast the oats on a medium heat. 5. once the butter has melted, ensure the oats are evenly coated in the butter and honey mix. 6. cook for about 5 minutes or until golden brown. 7. gather the granola into one corner of the pan in an even flat layer and press down with a spoon. remove from the heat and allow to cool slightly. 8. meanwhile, pop the blueberries in the microwave (or on the hob) for 1 minute until jammy. 9. begin assembling your bowl by placing your yogurt of choice in a flat surface, followed by the matcha chia pudding right on top (which should be thick by now!).  10. break up the granola into clusters using a wooden spoon and carefully add on top into a free corner. 11. layer the sliced strawberries beside the granola. 12. then, carefully spoon your blueberry compote into the bottom left. 13. don’t forget a generous dollop of peanut butter (or any nut butter!) and finish with a sprinkle of flaked / desiccated coconut…  enjoy xxx🍵🍋 #EasyRecipes #matcha #yogurt #yogurtbowl #chiapudding
