The perfect choice for a wholesome and delicious meal prep idea , you have to get this one done ! 🔥😮‍💨  Got everything I need from @Checkers South Africa  RECIPE :  1- Cook the rice in a pan of boiling salted water according to the packet instructions, then drain and season with sea salt and black pepper. Meanwhile, trim and finely slice the spring onions and deseed and roughly chop the peppers. Pick the coriander, finely chopping the leaves and stalks. 2 - Drizzle 2 tablespoons of olive oil into a large pan over a medium 2 heat, add the spring onions, pe string od casionder stalks, then fry for 5 minutes, or until softened, stirring occasionally. 3 - Meanwhile, place the beef into a mixing bowl, add the paprika, chilli 3 powder and a good piture into lande baller, then mix well. Using wet hands, roll the mixture into 12 little balls. 4- Tip the tomatoes into the pan along with 1 tin’s worth of water, breaking them up with a spoon as you go. Bring to the boil, then drain and add the black beans. 5 - Preheat the grill to high. Prick the chillies and place on a baking tray under the hot grill for 10 minutes, or until blackened, turning often. Meanwhile, heat 1 tablespoon of olive oil in a large non-stick frying meatballs are cooked through, stirring occasionally. 6 - Fold the chopped coriander leaves through the rice, then divide between plates, along with the meatballs and beans. Add 1 blackened chilli (feel free to chop and stir in just a little, or the whole thing if you think you can handle it!) and a dollop of yoghurt to each portion, then cut the lime into wedges for squeezing over. 7 - Ripple the hot sauce through the yoghurt, then spoon it over the traybake and pick over the parsley leaves, to serve.
