Few reasons. A 250,000 sqft DC has approx 4000 server racks. Each one of those weighs somewhere between 1800lbs and 4200lbs.

not to defend them but moving water up for cooling would be difficult and expensive I'm sure plus building up is probably more expensive as well

Incredibly inefficient in terms of cost and maintenance. Heat rises, water would have to be pumped upwards, skyscrapers are more expensive to construct (and have much more regulations and restrictions) There are a myriad of countless reasons why this is a bad idea.
