These crispy Italian herb & cheese zucchini rollups are delicious. Try them. 😋🥒 Ingredients: 2 medium zucchini, sliced thin lengthwise (When you wash them, pat them dry) 1 cup ricotta cheese ½ cup shredded mozzarella cheese ¼ cup grated Parmesan cheese 1 tablespoon of Italian seasoning 1 tablespoon of fresh finely chopped parsley & basil 1 tablespoon of finely minced garlic Salt & freshly cracked black pepper, to taste ½ cup Italian breadcrumbs or regular breadcrumbs * Fresh parsley or rosemary for garnish * Marinara sauce Preparation- Thinly slice zucchini lengthwise using a mandoline or sharp knife. (*Important-Salt slightly and let sit for 5 minutes; pat dry with paper towels.) In a bowl, mix ricotta, mozzarella, Parmesan, Italian seasoning, parsley,basil,minced garlic, salt, and pepper until creamy. Spread a spoon full of cheese mix onto each zucchini strip, then roll tightly. Lightly brush -rolls with olive oil -coat the outside in breadcrumbs. This gives the zucchini crispy texture. Bake at 400°F (200°C) or air fry at 375°F (190°C) for 12-15 minutes until golden brown and crispy. You can *sprinkle with herbs or leave them plain Serve warm with *marinara!
