Prep the Meat: Trim excess fat off the brisket point or chuck roast and cut into 2-inch cubes. Coat with olive oil or mustard. Generously apply the dry rub to all sides of the cubes. 2. Smoke (or Oven-Roast): Preheat smoker to 250°F (120°C) with hickory or oak wood chips. Place cubes directly on the grate or in a wire rack over a tray. Smoke for 2.5 to 3 hours, or until they reach an internal temp of ~165°F (75°C) and have a dark bark. (💡 No smoker? Roast in the oven uncovered at 250°F until bark forms, about 2.5–3 hours.) 3.
