hey btw barista over here, when you go to pull your shot and you let it sit without immediately running it you are burning the espresso! so try to get everything prepared so that you can pull it immediately after you lock it into place

Little tip. Run the heat up cycle with the portafilter in. A cold portafilter acts as a heatsink sucking heat away from the brew water.
