Pumpkin spiced loaf cake 🤎🎃 Ingredients: Cake: 2 cups (250g) flour 1½ tsp baking powder ½ tsp baking soda ½ tsp salt 2½ tsp pumpkin pie spice 1½ tsp ground cinnamon ¼ tsp ground nutmeg ½ cup (113g) unsalted butter melted ½ cup (120ml) vegetable oil ¾ cup (150g) light brown sugar packed ¼ cup (50g) granulated sugar 2 large eggs 2 tsp vanilla extract 1½ cups (340g) 100% pumpkin puree 2 tbsp whole milk Cream Cheese Frosting: 8 oz (226g) cream cheese softened ½ cup (113g) unsalted butter softened 1½ cups (180g) powdered sugar 2 tsp vanilla extract Pinch of salt Instructions: Preheat oven to 350°F Grease and line a 9x5 inch loaf pan with parchment paper. Whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and nutmeg In a separate bowl, whisk together the melted butter, oil, brown sugar, granulated sugar, eggs, vanilla, pumpkin puree, and milk until smooth. Fold the dry ingredients into the wet ingredients just until combined then pour it into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool in the pan for 15 minutes Beat the butter until smooth, then add the cream cheese and beat until creamy. Mix in the powdered sugar, vanilla, and salt until light and fluffy.
