Probably the 4th time making @noaawilliams_ viral crispy rice salad and it just gets better and better!! Also tried the @Real Good Foods chicken tenders and they were PERFECT for this! #Recipe #viralrecipe #highprotein #highproteinmeals Crispy Rice (Noa’s recipe! With some side notes from me!) * 450 g cooked jasmine rice, cooled * 3 tsp soy sauce (I used 1 dark soy and 2 regular) * 1 tbsp chilli crisp oil * 1 tbsp sesame oil Salad * 1–2 large cucumbers, thinly sliced * 1 cup edamame * 1 bunch green onions, thinly sliced * 1 avocado, chopped * Crispy chicken tenders, cooked as directed (I used real good foods) * Chopped peanuts (optional) Sweet Chilli Creamy Dressing * 1/4 cup Greek yogurt * 1/4 cup mayo (I used kewpie) * 50 ml sweet chilli sauce (I did siracha and honey) * 1/2 tsp paprika * Water to thin Method 1. Preheat the oven to 200°C (400°F) and line a baking tray with baking paper. 2. Toss the cooled rice with the soy sauce, chilli crisp oil, and sesame oil until evenly coated. 3. Spread the rice out in a thin layer on the baking tray and bake until crispy, tossing halfway through. 4. In a large bowl, combine the cucumber, edamame, green onions, avocado, cooked crispy chicken, and peanuts (if using). 5. Whisk together the Greek yoghurt, mayo, sweet chilli sauce, paprika, and enough water to make a pourable dressing. 6. Add the crispy rice to the salad, drizzle with the dressing, toss, and enjoy!
