These easy beef enchiladas are always a hit in our house! 🤍🌮 So cheesy, packed with flavor, and simple enough for a busy weeknight. Save this one for your next dinner! ✨ Full recipe is listed on my website: simply-jade.com Ingredients - 1½ lbs lean ground beef - 1 small yellow onion, diced - 2 cloves garlic, minced - 1 packet taco seasoning - ¼ cup water - 2 (10 oz) cans red enchilada sauce, divided - 3 cups shredded Mexican blend cheese, divided - 8 soft taco-size flour tortillas (8-inch) - Optional: 1 (4 oz) can diced green chiles Instructions 1. Preheat oven to 350°F. 2. Brown the ground beef and onion in a large skillet. Drain any excess grease. 3. Stir in the garlic and cook for 30 seconds. 4. Add the taco seasoning, water, and 1 can of enchilada sauce. Simmer for 3 to 5 minutes. 5. Remove from the heat and stir in 1½ cups of the shredded cheese (and green chiles if using). 6. Spread a few spoonfuls of the second can of enchilada sauce on the bottom of a greased 9×13-inch baking dish. 7. Fill each tortilla with the beef mixture, roll it up, and place seam-side down in the baking dish. 8. Pour the rest of the second can of enchilada sauce evenly over the enchiladas. 9. Sprinkle the remaining 1½ cups shredded cheese over the top. 10. Bake for 20 to 25 minutes, until hot and bubbly. Broil for 1 to 2 minutes if you’d like the cheese lightly browned.
