Place four 6-ounce ramekins inside a large, deep baking dish or roasting pan. Step 2: Heat the cream In a medium saucepan, combine the heavy whipping cream and vanilla. Heat over medium heat until the mixture is hot and small bubbles form around the edges (do not boil). Remove from heat. Step 3: Whisk egg yolks and sugar In a medium bowl, whisk together the egg yolks, 1/3 cup of granulated sugar, and a pinch of salt until smooth and slightly pale. Step 4: Temper the eggs Slowly pour a small stream of the hot cream into the egg yolk mixture while whisking constantly. This warms the eggs gently without scrambling them. Gradually whisk in the remaining hot cream until completely combined. Step 5: Strain and pour into ramekins Pour the custard mixture through a fine-mesh strainer into a liquid measuring cup to remove any air bubbles or stray egg bits.
