Ingredients: Chicken: * 2 large boneless, skinless chicken breasts, cut into bite size pieces * 2 tbsp olive oil * 1 tbsp Cajun seasoning * 1 tsp smoked paprika * 1 tsp garlic powder * ½ tsp onion powder * Salt & black pepper Honey Butter Glaze: * 3 tbsp butter * 2 tbsp honey * 3 cloves garlic, minced * 1 tsp red pepper flakes (optional) Creamy Garlic Parmesan Sauce: * 2 tbsp butter * 4 cloves garlic, minced * 1 cup heavy cream * ¾ cup freshly grated Parmesan * ½ cup shredded mozzarella * ½ tsp Italian seasoning * Black pepper Loaded Parmesan Rice: * 2 cups cooked jasmine rice * 2 tbsp butter * ½ cup Parmesan * ¼ cup mozzarella * 2 tbsp chopped parsley Garnish: * Fresh parsley * Fresh cracked black pepper * Extra Parmesan * Hot honey drizzle Instructions: 1. Toss the chicken with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper. 2. Heat olive oil in a cast iron skillet over medium high heat and sear the chicken until golden with crispy edges. Remove from the skillet. 3. In the same pan, melt the butter. Stir in honey and minced garlic, then return the chicken and toss until glossy and caramelized. 4. In another saucepan, melt butter and sauté garlic for 30 seconds. Add heavy cream and simmer for 2 minutes. 5. Stir in Parmesan, mozzarella, Italian seasoning, and pepper until smooth and creamy. 6. Fold butter, Parmesan, mozzarella, and parsley into the hot rice until creamy. 7. Spoon the Parmesan rice onto a plate. Add the honey butter Cajun chicken on top of rice. 8. Generously drizzle the creamy garlic Parmesan sauce over the chicken and slightly over the rice. 9. Finish with parsley, extra Parmesan, cracked pepper, and a light drizzle of hot honey.
