Beijing Beef (Panda Express Style) This one’s not a budget recipe, and I don’t want to pretend it is. Between the steak, sauces, and the amount of oil you need for frying, you’ll likely spend more than just ordering a combo plate at Panda. But—if you live far from one, or you like the challenge of recreating restaurant meals at home, this version is absolutely worth a try. It’s not exact, but it’s close—and we both loved it. Ingredients + Estimated Package Prices: • 1 lb steak, thinly sliced – $6.00 (sirloin, flank, or similar) • 3 egg whites – from $2.00/dozen eggs • 1 tbsp cornstarch (for marinade) – from $1.50 box • 3 tbsp soy sauce (for marinade & sauce) – from $2.00 bottle • 1 cup cornstarch (for dredging) – same box as above • 2–4 cups canola oil (for frying) – $4.00 (48 oz bottle) • 1 small yellow onion, chopped – $0.75 • 1 large bell pepper, chopped – $1.25 Sauce: • 2/3 cup pineapple juice – $1.00 (small can or bottle) • 1/3 cup rice vinegar – $2.00 • 1/3 cup granulated sugar – pantry • 3 tbsp ketchup – from $1.50 bottle • 1/4 cup chili garlic sauce – $2.50 • 1 1/2 tsp soy sauce – included above • 1 tsp canola oil – included above • 1 tsp grated garlic – $0.50 (1 head) • 1 tsp grated ginger – $0.50 (small piece) • 1 tbsp water + 2 tsp cornstarch (slurry) • Cooked white or brown rice – $2.00 Total cost of ingredients purchased: ~$27.50 Serves 3–4. Most ingredients will carry over for future recipes. Basic Steps: Marinate thinly sliced steak in egg whites, soy sauce, and cornstarch for 2 hours. Make sauce with pineapple juice, vinegar, sugar, ketchup, chili garlic sauce, soy sauce, garlic, and ginger. Simmer with cornstarch slurry until thick. Dredge marinated beef in cornstarch and deep fry in batches. Flash-fry or stir-fry onions and peppers. Toss everything with the sauce and serve over rice.
