@daniela_dish: Zucchini Cornbread Casserole In honor of National Zucchini Day , we are sharing one of our absolute favorite zucchini recipes. It’s the perfect summer dish combining fresh zucchini and sweet corn into one cheesy delicious casserole. We love serving this at barbecues or even saving for saving for tailgating season. Either way it’s always a crowd pleaser. • 2 medium zucchini shredded about 3 cups 1/2 vidalia onion chopped 1 cup fresh corn about one large ear 1 lb cheddar shredded 2 eggs 1 jalapeno seeded diced 1/4 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon salt 1/2 teaspoon pepper 1 box jiffy cornbread mix 8.5 oz Mix the zucchini, onion, corn, 1/2 of the cheese, eggs, jalapeno, garlic powder, cumin, salt and pepper in a large bowl. Add in the jiffy mix and combine well. Pour into a 9 x9 prepared baking dish and top with remaining cheese. Bake at 350 for about 45-50 minutes • #cornbread #zucchini #casserole
