Recipe: Sweet Potatoes 🥔 Fresh: • 3–4 medium sweet potatoes, peeled & cubed • Drizzle with olive oil • Season with salt, pepper, garlic powder & smoked paprika • Bake at 400°F for 25–30 minutes, flipping halfway. 🥔 Frozen: • 1 (20–24 oz) bag frozen diced sweet potatoes • Drizzle with olive oil • Season with salt, pepper, garlic powder & smoked paprika • Bake at 400°F for 35–40 minutes, stirring halfway, until browned and tender. Taco Meat • 1 lb lean ground beef (I use 96/4) • 1 small yellow onion, diced • 1 packet taco seasoning Cook onion until softened. Add beef and cook until browned. Stir in taco seasoning according to package directions. Street Corn • 1 bag frozen fire-roasted corn • 2 tbsp (or 1 large spoonful) plain Greek yogurt • 1 tbsp mayo • 1 small jalapeño, finely diced • Dash of smoked paprika • A few spoonfuls cotija or parmesan cheese Cook the corn according to package directions, then stir in the remaining ingredients until creamy. Build your bowls with the roasted sweet potatoes, taco meat, and street corn. Top with avocado, cilantro, lime juice, extra cheese, hot sauce, or any of your favorite taco toppings.
