@katie_tj: The Most Tender Moussaka 🍆 I’ve tried many versions of moussaka, including in Greece, and this one is definitely one of my favorites. Tender layers that simply melt together, rich meat sauce, and silky béchamel. The little secret? Breadcrumbs. They absorb excess moisture and help the layers hold beautifully while keeping the moussaka incredibly tender. Ingredients 2 large eggplants Olive oil, salt Meat sauce: 450 g ground beef 1 onion 2–3 garlic cloves 1½ tbsp tomato paste 250–300 g crushed tomatoes ⅓ cup (80 ml) dry red wine ¼–⅓ tsp cinnamon ½ tsp oregano Pinch of nutmeg Salt & pepper Béchamel: 40 g butter 40 g flour 430–450 ml milk 45–50 g Parmesan 2 egg yolks Salt, pepper & nutmeg For assembling: Butter 4 tbsp fine breadcrumbs 20–30 g Parmesan Instructions Slice eggplants lengthwise, about ¼ inch (5–7 mm). Salt for 15–20 min, pat dry, brush with olive oil and roast at 425°F (220°C) for 20–25 min, flipping once. For the meat sauce, sauté onion, then brown the beef. Add garlic and tomato paste. Cook 1–2 min. Add wine and reduce for 2–3 min. Add tomatoes and spices. Simmer uncovered 25–30 min, until thick. For the béchamel, melt butter, stir in flour, then gradually whisk in warm milk. Cook until thick. Remove from heat; add Parmesan and seasoning. Cool for 5 min. Temper the yolks with a little warm béchamel, then whisk them back into the sauce. Butter a 9×9-inch dish. Add 2 tbsp breadcrumbs → eggplant → meat sauce → 2 tbsp breadcrumbs → eggplant → béchamel → Parmesan. Bake at 375°F (190°C) for 40–45 min until golden. Rest 25–30 min before slicing.
