How to Make an Italian Beef Sandwich🧑🏻🍳🐻 - (#1) MY TOP 3 DISHES FROM THE BEAR FULL RECIPE BELOW ⬇️ INGREDIENTS: 2lb beef roast (any cut you’d like) 1L beef stock 1 onion 1 + 1 jumbo carrot 4-5 stalks celery 5-6 cloves garlic 1/2 jar preserved hot peppers 1 head cauliflower 2 poblano peppers 2 red bell peppers 4 tsp dried chili flakes 4 tsp dried oregano 1 tsp fennel seeds 1 tsp dried basil leaves 2 bay leaves 3-4 sprigs thyme 150mL red wine (optional) 250mL white wine vinegar 250mL olive oil 2 tbsp neutral, high-smoke point oil 2 x 9" Italian bread rolls Freshly cracked black pepper (to taste) 1/4 cup salt + more to taste INSTRUCTIONS: 1. Prepare your vegetables for the giardiniera. Remove just the florets from your cauliflower, and cut them into 1/2" pieces. Remove the seeds, and roughly chop your bell & poblano peppers into ~1/2" pieces. Do the same with 1 large carrot, and 3 stalks of celery. Add all your chopped veggies to a large mixing bowl. Add 1 clove chopped garlic, 1 tbsp dried chilis, 1 tbsp oregano, freshly cracked black pepper, and 1/4 cup of sea salt. Toss all your veggies to combine. You are effectively "mascerating" your veggies, which will help them soften, and release excess liquid. Keep them off to the side, at room temperature, for at least one hour, up to 2 hours. 2. Strain the excess liquid that has been released from your veggies, and chop ~1/2 cup of preserved hot peppers. Add them to your vegetable mix. Stir to combine, and add your veggies to a large mason jar. Add equal parts white wine vinegar and olive oil until all the vegetables have been submerged. You can also add some liquid from your preserved hot peppers. You can make your giardiniera ahead of time - the longer it sits the better it will be! 3. Generously season your beef roast. Pre-heat a large Dutch oven over high heat with 2 tbsp neutral oil. Sear your beef on all sides, then remove it from the pot. Turn the heat on your pot to low, and add 1 onion, 1 carrot, 1 celery stalk, and 4 cloves of garlic. Sauté until the vegetables begin to caramelize. Add 1 tsp each of chili flakes, fennel seeds, dried oregano and dried basil. Sauté 30 more seconds to toast the spices. Deglaze your pot with red wine (optional), and place your beef back into the pot. Cover the beef with stock, and add your thyme and bay leaves. Simmer over low heat, turning your beef every 5 minutes or so, until the internal temperature of your beef reaches 45-48 degrees Celsius. Remove the beef from the liquid, and transfer it to a wire rack to cool. 4. Once your beef is cool to the touch, transfer it to the fridge for at least 4 hours, or up to 24 hours. You want your beef to be fridge-cold in the centre before slicing it. While your beef is resting, reduce your liquid by half, and strain the solids. Adjust the seasoning with salt, pepper, and a little bit of the liquid from your preserved hot peppers (optional). 5. When fully cooled, slice your beef as thin as you can. If you have a meat slicer, that will work best. Bring your jus to a gentle simmer. Cut your bread in half, but not quite all the way through (you want the top and bottom still attached). Scoop out as much of the bread from the top half as you can - this will allow more space for your beef & toppings. Drizzle your bread with olive oil, and toast it under the broiler. Add your sliced beef to your jus, just long enough so that it heats through. You want it to be ever-so-slightly pink when you take it out from the liquid. Pile the beef generously on your bun, and add plenty of giardiniera. Slice in half, and serve with plenty of jus #italianbeef #sandwich #thebear #Recipe
