@home_cooked_cravings: 🍓 Victoria Sponge Cake Sandwich Loaf For a 2lb loaf tin Cake * 200g unsalted butter, softened * 200g caster sugar * 4 large eggs * 200g self-raising flour * 1 tsp vanilla extract * 2 tbsp milk Filling * homemade strawberry jam * 200ml double cream * 1 tbsp icing sugar * ½ tsp vanilla extract To finish * Icing sugar * Fresh strawberries, optional 🍓 Method 1. Preheat oven to 170°C fan. 2. Grease and line your 2lb loaf tin with baking paper. 3. Beat the butter and sugar for 3–4 minutes until pale and fluffy. 4. Add the eggs one at a time, mixing well after each. 5. Fold in the flour and vanilla. 6. Add the milk and gently mix until smooth. 7. Spoon into the loaf tin and level the top. 8. Bake for 45–55 minutes, checking from 45 minutes. A skewer should come out clean. 9. Leave to cool completely. 10. Carefully slice the loaf horizontally through the middle. 11. Spread the bottom with strawberry Jam. 12. Whip the cream with icing sugar and vanilla, then spread over the jam. 13. Place the top half back on. 14.
