The little crepes you're eating are called Banh Khot, they're not hard to make but they take a lot of time and are a killer to make in the heat though. I recommend making the bigger version of it called Banh Xeo. It's basically crepe with all the toppings. The pan needs to be extremely hot so the dough is crispy. I usually cook or boil up shrimp and pork belly (sliced) first and then drop them into the dough when it's usually partly cooked on the pan. I love Banh Khot because it's more crispy but just bumper to stand over the stove to make multiple pans of it!
