This is the chewy Sichuan noodle you didn’t know was traditionally vegan. 🍜🌶️ Most people think Sichuan food is just "spicy," but in Episode 2 of Planted in China, we’re uncovering the secret of Tianshui Mian (Sweet Water Noodles). The magic isn’t in the heat, it’s in the Fuzhi Jiangyou, compounded soy sauce, and these trampoline-like" hand-cut noodles. It’s unlike any noodle you’ve ever had. Ingredients: Make 2-3 Dough: 400g all purpose flour (T55) 200g water (lukewarm) 3/4 tsp salt Compounded soy sauce: 400g light soy sauce 100g water 80g Chinese brown sugar 70g rock sugar 4g bay leaves 4g cinnamon bark 4g fennel seeds 2 star anise 1 Cao Gao 草果/black cardamom (cracked open) 10g fresh/frozen galangal (or 4g dried galangal) 15-20g fresh ginger 1 leek stem 2 spring onion stem Garnish: All all the following to your taste Compounded soy sauce Chilli oil Chinese sesame paste Toasted peanuts/sesame seeds Notes: 1. Soak all dry aromatics in warm water for 15min before cooking 2. When soy sauce starts to get sticky, drain out the aromatics then continue cooking it down until it starts to form dense and small bubbles 3. Knead the dough three times before rolling it out, and rest it for 30min in between. 4.
