Sweet, savory, spicy, and ridiculously easy to make. This homemade teriyaki chicken is one of those meals that comes together with barely any effort but tastes like you ordered it. Steps: Cook the chicken: Season the chicken with salt, then sear it in a hot pan until nicely browned on both sides. Remove & set aside. Build the sauce: Sauté minced garlic & ginger until fragrant. (Tip: If you put the ginger in the freezer for a while before grating, it becomes so much easier to grate.) Add soy sauce, vinegar, sugar or honey, white pepper, chili paste, & MSG. Let everything simmer until the sugar dissolves. Then add the slurry (cornstarch dissolved in water) & let it simmer until the sauce thickens & becomes glossy. Make it a full meal: Add any vegetables to the same pan you seared the chicken in and give them some good color. You can use broccoli, or mixed vegetables like peppers and onions. In my case, I used a quarter cabbage. Sear it on both sides, then add some water & cover until cooked through. The water will steam the cabbage and cook it from the inside. Finish: Return the chicken to the pan, cover everything with the teriyaki sauce, and toss until everything is coated. Serve: I served mine over white rice cooked with the remaining ginger to infuse it with its flavor, with the chicken over the rice, a side of cabbage, more sauce, and a garnish of sesame seeds. Ingredients (Serves 4): Chicken: 500g boneless chicken thighs 1 quarter cabbage Salt, to taste Oil for cooking Teriyaki Sauce: ½ cup light soy sauce ½ cup rice vinegar (or ¼ cup regular white vinegar) ½ cup sugar or honey (or a mix of both) 1 tsp white pepper Chili paste, optional MSG, optional 1 tbsp cornstarch mixed with water Sesame seeds for garnish
