@thegirldinnerdiaries: POTATO & LEEK SOUP 🤎🍂 Simple, cosy & exactly what I want for dinner when the evenings start getting colder ✨ Candle lit, rain outside, a bowl of creamy soup & crusty bread… this is exactly what I mean when I say cosy comfort food 🤎 Ingredients • 3 leeks • 1 onion • ~800g potatoes (I like mine thicker, add more if you prefer runnier) • 4–5 garlic cloves • Butter • Salt & pepper • Thyme • Rosemary (optional) • 2 vegetable or chicken stock cubes • Boiling water • Crusty roll (not optional 🫶🏼) 👩🏼‍🍳 1. Chop all your veg, making sure to wash your leeks really well. 2. Add the leeks, onion, garlic, butter, salt & pepper to a large pot and let everything sweat down. 3. Add the potatoes, thyme & rosemary and let everything cook for another 5-10 minutes, stirring regularly so it doesn't stick. 4. Add your 2 stock cubes and enough boiling water to just cover the vegetables. 5. Simmer until the potatoes are fork tender. 6. Blitz until completely smooth and creamy. 7.
