Pork chop recipe that will end any moans or groans about pork chops being in the weekly rotation. Bland? Dry? None of that here!  INGREDIENTS: -1/4 of a large red onion, sliced -Bone-in pork chops (I made 2, but I’ve made 4-6 at a time in one slow cooker and still comes out great! Just add extra onion) - 1/4 water  -brown sugar, 2 tbs  -adobo, 1-1 1/2 tbs  -paprika, 1 tbs  -bay leaf -barbecue sauce of choice  Slow cooker preparation-  I slice about 1/4 of a red onion for the bottom of my slow cooker. I swear it makes a huge difference! I also like to add a little bit of water, just enough to cover the bottom. It’s probably about 1/4 cup. The rub- 1-1 1/2 tbs adobo  1 tbs paprika  2 tbs brown sugar, packed  Mix to combine! The pork chops- The cut is important here! I swear by the Trader Joe’s frenched bone-in center cut. If that’s not for you, you can definitely use your bone-in chop of choice but I wouldn’t recommend boneless. You’ll want something thicker, too; these are at least an inch.  You want to generously season these chops with the rub, as shown here. We’re aiming for every inch to be covered. I then lay the chops on the bed of red onion and cover them with a generous amount of barbecue sauce (we are sweet baby ray’s people, but you can use whatever!) Add a bay leaf and slow cook for about 5 hours. I’ve played around with cook time a bit and I’ve found that after 5 hours the pork tends to get dry and sometimes isn’t as tender, regardless of the amount of moisture in the slow cooker. My pro tip: prep the inside of your crockpot the night before and stick it in the fridge. Take it out about an hour before you plan to cook to take the chill off and add the water right before you start cooking. If you start cooking when it’s ice cold, you run the risk of a tougher end product.  When these are done, I take them out and add a light coating of barbecue sauce to either side, place them on a greased pan and broil for a few minutes. This gives you a nice sticky coating rather than a wet sauce. Don’t broil for too long—burnt sugar (both in your rub and in your barbecue sauce) has a bitter flavor.
