@blackskullsreaper: Zucchini Cornbread Casserole 2 medium zucchini shredded about 3 cups 1/2 vidalia onion chopped 1 cup fresh corn about one large ear 1 lb cheddar shredded 2 eggs 1 jalapeno seeded diced 1/4 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon salt 1/2 teaspoon pepper 1 box jiffy cornbread mix 8.5 oz Mix the zucchini, onion, corn, 1/2 of the cheese, eggs, jalapeno, garlic powder, cumin, salt and pepper in a large bowl. Add in the jiffy mix and combine well. Pour into a 9 x9 prepared baking dish and top with remaining cheese. Bake at 350 for about 45-50 minutes
