i feel like i want to make a drizzle cake series this is so much fun hehe 💕 (for the cake) you’ll need: - 200ml olive oil - 4 eggs  - zest of one whole grapefruit  - 200g caster sugar  - 1tsp vanilla extract - 280g self-raising flour  - 1tsp baking powder  (for the grapefruit drizzle): - juice of 2/3 of a grapefruit  - 1 cup icing sugar  method: 1. in a large bowl, combine the olive oil, eggs, grapefruit zest, sugar, flour and baking powder. 2. using a large whisk, whisk until silky smooth. 3. pour into a lined 900g loaf tin. 4. preheat the oven to 170c and bake for 50 minutes to 1 hour. 5. meanwhile, prepare the drizzle by combining the icing sugar and grapefruit juice in a small bowl. 6. mix until no lumps remain. 7. check the cake after 50 minutes and poke with a skewer all the way into the centre. if the skewer comes out clean, it’s baked! if not, leave for another 10-15 minutes until it’s fully cooked. (if it starts to brown too easily, cover with a layer of foil whilst it cooks!). 8. remove from the oven and whilst it’s still hot, poke the cake all over using a wooden skewer. make sure you poke the skewer at different depths! 9. pour the drizzle evenly all over the cake and allow to sit for a few minutes. 10. once cool enough to handle, remove the cake from the tin and peel away the baking parchment. 11. you can decorate it however you like or keep it plan…i just put a little wedge of fresh grapefruit on top! 12. slide into thick slices and serve with a dollop of creme fraiche / greek yogurt or simply leave it plain! enjoy xxxx💕 #baking #EasyRecipes #cake #oliveoil
