This is the kind of dinner that makes everybody wander into the kitchen asking, “When are we eating?” 😂 Golden seared chicken, sun-dried tomatoes, spinach and pasta tossed in a rich, garlicky Parmesan cream sauce. Restaurant-level comfort food without leaving the house. Serves: 4–6 Ingredients: 4 boneless skinless chicken breasts Salt and black pepper 1 tsp Italian seasoning 1 tbsp olive oil 2 tbsp butter 4 cloves garlic, minced ½ cup sun-dried tomatoes, drained and chopped 2 cups heavy cream 1 cup chicken broth 1 cup freshly grated Parmesan cheese 2 cups fresh spinach 8 oz spaghetti or linguine ½ tsp red pepper flakes, optional Fresh basil or parsley Directions: 1. Sear chicken for about 5–7 minutes per side, depending on thickness, until cooked through. Remove and set aside. 4. Lower heat to medium. Add butter and garlic and cook about 30 seconds. 5. Stir in sun-dried tomatoes, heavy cream and chicken broth. Simmer 3–4 minutes. 6. Add Parmesan and stir until melted and creamy. 7. Add spinach and let it wilt into the sauce. 8. Toss in the cooked pasta. Add a splash of reserved pasta water if you want to loosen the sauce. 9. Return chicken to the skillet and spoon that creamy sauce all over it. 10. Finish with fresh basil, extra Parmesan and red pepper flakes.
