Crush the Biscoff biscuits into fine crumbs and mix with the melted butter until evenly coated. 2. Press the mixture firmly into the base of a 9-inch springform tin. 3. Chill for 20 minutes. Prepare the Crunchy Pistachio Layer 1. Add the toasted, crushed kadayif to a bowl. (If using ready-to-toasted kadayif, simply crush it slightly before mixing.) 2. Stir in the pistachio spread, melted butter and a pinch of sea salt until fully combined. 3. Spread an even layer over the chilled Biscoff base, pressing down gently. 4. Chill for another 20 minutes. 3. Make the Cheesecake Filling 1. Beat together the cream cheese, mascarpone, icing sugar, 3 tbsp pistachio spread, vanilla and condensed milk until smooth and creamy. 2. In a separate bowl, whip the cold double cream to stiff peaks. 3. Gently fold the whipped cream into the cheesecake mixture until fully combined. 4. Assemble 1. Spoon the cheesecake filling over the crunchy pistachio layer. 2. Smooth the top with a spatula. 3. Cover and chill for at least 6 hours, or preferably overnight, until fully set. 5. Decorate 1. Pour the melted pistachio spread over the chilled cheesecake and spread evenly. 2. Chill for 15–30 minutes to allow the topping to set. 3. Finish with crushed pistachios and dried rose buds before slicing and serving.
