Blend the chicken breast and thighs until minced. 2. Mix with all chicken seasonings, eggs, and cornflour until well combined. 3. Shape into nugget-sized pieces. And freeze for at least 1 hour. 4. In a bowl, combine batter ingredients and whisk in sparkling water until smooth. 5. Heat oil to medium (170–180°C). 6. Dip nuggets into batter and fry for 4–6 minutes until golden and cooked through. 7. Drain on paper towels and serve hot.
