Cob Loaf Stuffed Chicken 🤤🧀🥓 One of my favourite childhood snacks turned into a pub-style main. It’s a little bit weird, definitely indulgent & a fun date night main. Serves 2 You’ll need: * 2 chicken breasts * 4 rashers streaky bacon * 125g cream cheese * 1 tbsp sour cream * 60g baby spinach, finely chopped * 2 rashers bacon, cooked & diced * 2 tbsp grated parmesan * 2 tbsp French onion soup mix Garlic Sauce * 30g butter * 2 garlic cloves, minced * 1 tbsp plain flour * 250ml milk * 2 tbsp grated parmesan * Salt & pepper To make it: Mix the stuffing ingredients together. Cut a pocket into each chicken breast and fill generously. Wrap each breast with 2 rashers of streaky bacon and secure if needed with toothpicks. Air fry at 190°C for 22–25 minutes (or bake at 200°C for 30–35 minutes) until the chicken reaches 75°C internally. For the sauce, melt the butter, cook the garlic for 30 seconds, stir in the flour, then gradually whisk in the milk. Simmer until thickened before adding the parmesan. Season to taste. Serve over creamy mash, spoon over the garlic sauce and finish with crunchy croutons. Would you order this at the pub? 🍺👇
