@jodiyandow: High-protein dinner/lunch meal prep This pulled pork is a fall staple. So easy to prep once and have ready to go all week. Makes so much and reheats well! 3 lb Pork butt 16 oz kettle and fire bone broth small can of Tomato paste 3 tbsp Apple cider vinegar 1 tbsp Ground cumin 2 tsp Ground Ceylon cinnamon 1 tbsp Paprika 1 tsp Fennel seeds 1 tsp Salt 1 tsp Black pepper 8 oz Potatoes (cubed) 2 Onions (diced) 2 tbsp Garlic Add the pork butt, potatoes, and onions into the Crockpot. Whisk remaining ingredients then pour on top. Cook on low for 8-10 hours. Once done, shred pork and give it a good stir. Inspired by Smart Fertility Choices! Bring to the boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender. Blend until silky smooth, stir through the coconut milk and season to taste. Serve with a dollop of Greek yoghurt, coconut yoghurt or cashew cream and finish with my fresh green herb dressing. Green Herb Dressing Blend a handful of coriander or parsley with a squeeze of lime juice or verjuice and a drizzle of extra virgin olive oil.
