STEWS OF THE CARIBBEAN 🌎 Welcome to Caribbean stews, my new series where i’ll be exploring the world of Caribbean stews. I recently got back from this incredible part of the world and It made me realise a few important things, with one of them being how incredible this region is at making stews.. Todays episode takes us to the beautiful Caribbean Island of Jamaica to make an iconic brown stew chicken. I made this today with my bro Max, who is Jamaican and came and gave me some incredible tips. Full recipe below 3 boneless & skinless chicken thighs 3 boneless & skinless chicken drumsticks 1 tsp chicken seasoning 1/2 tsp all purpose seasoning 8 pimento berreis 2 tbsp green seasoning (comment ‘green’ for recipe) 5 sprigs of fresh thyme 1 tsp coconut oil 1/2 green bell pepper sliced 1/2 red bell pepper sliced 1 brown onion diced 2 scallions/green onions diced 1 scotch bonnet Salt & Black pepper to taste 1 tbsp coocunt oil 1 tbsp caster sugar 1 tbsp ketchup 1 bay leaf 200ml boiling water/stock Start by marinating the chicken with all the ingredients listed above, then set aside overnight in the fridge or if your short on time, 20 minutes. Heat up a large stew pot on a medium heat, then add the coconut oil and sugar. Allow the sugar to brown for a few minutes until it reaches a dark brown but not burnt colour, as seen in the video. Then add the marinated chicken pieces, reserving the vegetables and remaining marinade in the bowl. Brown on each side, then add the remaining items from the bowl, reduce the heat to medium, then cover and let the chicken cook in its own juices for 10 minutes. Meanwhile, add some boiling water to the marinade bowl to mop any the remaining bits of flavours. Remove the lid from the pot, then add the ketchup, bay leaf and water, then simmer for a further 20 minutes, partially covered, until the chicken is cooked and the stew nice and thick!
