While authentic Greek tzatziki is traditionally made with either fresh dill or mint (dyosmos), I also love making it with fresh parsley. It gives the sauce a lighter, fresher, and more delicate flavor without overpowering the other ingredients. Whether you’re not a fan of dill or simply want to try something different, I really think you’re going to love this version. Give it a try and let me know—which one do you prefer: dill, mint, or parsley? 🥒🇬🇷 Ingredients • 3 small cucumbers or 1 very large cucumber, grated and well strained • 1½ cups (350 g) strained Greek yogurt • 2–3 garlic cloves, finely grated • 2 tbsp fresh parsley, finely chopped • 3 tbsp extra virgin olive oil • 2 tbsp red wine vinegar • Salt and freshly ground black pepper, to taste Instructions Grate the cucumber using the coarse side of a grater. Place it in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is essential for a thick and creamy tzatziki. In a mixing bowl, combine the strained cucumber, Greek yogurt, grated garlic, parsley, olive oil, red wine vinegar, salt, and pepper. Mix gently until everything is smooth and well combined. Taste and adjust the seasoning if needed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together (optional, but highly recommended). Before serving, drizzle with a little extra virgin olive oil and, if you like, garnish with a few Kalamata olives.
