Ingredients • 200g fresh breadcrumbs @Tesco Ireland • 1 onion, finely chopped • 40g butter @Kerrygold Ireland • 1 tsp dried rosemary • 1 tsp dried thyme • 1 tsp dried sage • 1 tsp dried parsley • About 70ml chicken stock (or enough to bring the stuffing together) • Salt and white pepper, to taste Method 1. Place the chopped onion, butter and dried herbs in a microwave-safe bowl. Microwave for 5 minutes, stirring halfway through if needed, until the onion is softened and cooked. 2. Add the breadcrumbs and mix well. 3. Gradually pour in the chicken stock, mixing until the stuffing just comes together. You may not need all of the stock. 4. Taste and season with salt and white pepper. 5.
