I’ll let you decide in the comments 🫣 ✨Hong Kong French Toast Cookie✨ filled with a peanut butter buttered toast ganache & even topped with a little slab of smoked sea salt vanilla butter 🧈🤯 Snapshot below and full recipe is over on my Substack (link in bio) ✍️ Ingredients ✨ 🥜 Peanut butter toast ganache: • 200g white choc • 150g double cream • 50g crunchy peanut butter • 50–60g buttered toasted sourdough • Pinch flaky salt 🧈 Vanilla brown butter slab: • 150g butter • 2 tsp vanilla bean paste • Pinch smoked sea salt 🍞 Toast flakes: • 3 slices sourdough • 1 tbsp salted butter 🍪 Cookie dough: • 50g cold butter + 80g brown butter • 1½ tsp white miso • 160g sugar + 60g dark brown sugar • 1 egg + 1 yolk • 1 tsp vanilla + 30g black treacle • 250g flour • ½ tsp bicarb + ¼ tsp baking powder • ¼ tsp salt • 100g blonde choc • 60g toast flakes How 🌀 Toast + butter sourdough → crumble into the white choc, peanut butter, condensed milk & salt 🥜🍞 Heat cream → pour over → melt → stick blend until semi-smooth → chill ❄️ Brown 150g butter → chill 90 mins → whisk with vanilla + smoked salt → spread flat → chill/freeze until solid → cut into tiny squares 🧈 Toast 3 slices sourdough → butter → blitz into flakes → save 60g for dough, rest for coating. Brown 80g butter → cool → mix with cold butter, sugars + miso. Add egg, yolk, vanilla + treacle → mix. Fold in dry ingredients → blonde choc + 60g toast flakes 🍫 Scoop 80–90g dough → flatten → add chilled peanut butter ganache → seal → roll in toast flakes → chill ❄️ Bake at 190°C for 9–11 mins 🔥
