Soft pumpkin spice coffee cake cookies🎃🍂  They don’t actually have coffee in them, they’re meant to be enjoyed with coffee! (:  Cookies:  1 cup (227g) unsalted butter  3/4 cup (165g) light brown sugar, packed 1/4 cup (50g) granulated sugar 1 large egg 1 egg yolk 1/3 cup (80g) pumpkin puree 2 tsp vanilla extract 2 1/2 cups (312g) all purpose flour 1 tablespoon cornstarch 3/4 tsp salt 1/4 tsp baking powder 1/2 tsp baking soda  2 1/2 tsp pumpkin pie spice 1/2 tsp cinnamon crumb topping: 2/3 cup (147 g) light brown sugar 3/4 cup (94 g) all-purpose flour 1/2 tsp cinnamon or pumpkin spice  pinch of salt  6 tbsp (85 g) unsalted butter, melted  vanilla glaze: 1 cup (130g) powdered sugar 1-2 tbsp milk or cream  1 tsp vanilla extract -Browning the butter is optional, you could also use softened butter. If you do brown it I suggest waiting until it’s completely cooled off before using.  To brown butter, melt on medium heat. Once it melts and begins to bubble, keep an eye on it. Once you notice it turn a golden brown color and smell nutty, stir and remove from the heat. Pour into a bowl to chill and cool down completely.  Mix the butter, brown sugar, and granulated sugar until combined. Add the egg, egg yolk, and vanilla. Mix well. Before adding the pumpkin puree, make sure to blot it with a paper towel to remove some moisture. It shouldn’t be liquidy. Add the puree and mix until everything is fully combined.  Next, add the flour, cornstarch, salt, baking powder, baking soda, pumpkin spice, and cinnamon to the wet ingredients. Fold in using a rubber spatula until there are no more flour streaks. Chill the dough for 30-45 minutes  Meanwhile make the crumb by combining the sugar, flour, cinnamon, and pinch of salt. Mix well. Slowly pour in the melted butter. Don’t add it all at once. Mix with a fork or your finger tips until it forms crumbs. Too much butter will result in a mushy crumb.  Preheat the oven to 350F, scoop 2-4 tbsp of dough, roll and press the center slightly with your thumb or the scoop. Add about 1 tbsp of crumb to the center. Bake for 11-13 minutes, depending on how big or small. Check at 11 minutes if they’re small.  Make the glaze but mixing the powdered sugar, milk, and vanilla.
