Here’s an easy Crockpot Street Corn Chicken recipe that’s creamy, flavorful, and perfect over rice, with tortillas, or as a dip. 🌽 😋 #MomsofTikTok #cookwithme #crockpotrecipes #EasyRecipe #cooking @Beautiful By Drew Ingredients: 2lbs boneless, skinless chicken breasts (or thighs) 1-2 (15 oz) cans corn, drained 1 (8 oz) block cream cheese 1 tbsp minced garlic 1 tbsp chili powder 1/2 tsp paprika Juice of 2-3 limes 1/2 cup mayonnaise (duke’s is my fav) 1/2 cup of sour cream 1 cup crumbled cotija cheese ¼ cup chopped cilantro (optional) Tajín or chili powder for garnish (optional) Instructions: Add the chicken to the crockpot. Pour in the corn. Sprinkle with chili powder and paprika. Add minced garlic, mayonnaise, and place the cream cheese on top. Squeeze the limes for the juice inside the crockpot. Cook on low for 4-6 hours or high for 3-4 hours. Shred the chicken with two forks and stir until the cream cheese is fully mixed in. Add the cotija cheese a cilantro (optional). This can be served with flour/corn tortillas, rice, tortilla chips, burrito bowls, or even crunchy taco shells. Optional Toppings: Extra cotija cheese Sliced jalapeños Diced avocado Fresh cilantro Tajín Lime wedges This recipe makes about 6 servings and tastes even better as leftovers the next day.
