decided my favourite flavour combination so i’m lemon & poppyseed-maxxing from now on (for the lemon & poppyseed ricotta pancakes) you’ll need: - 150g ricotta cheese - zest of 1 lemon - juice of 1/4 of a lemon - 1 egg - 1tbsp poppyseeds - 2tbsp honey - 1/2 cup (65g) plain flour - 2tsp baking powder - 2tbsp butter for frying (for the blueberry chia jam): - a large handful of blueberries (about 1/2 cup) - 1tsp chia seeds - 1tsp honey (optional) (to serve): - greek yogurt - pistachios, chopped method: 1. begin by placing the ricotta, lemon zest, lemon juice, egg, poppyseeds, honey, flour and baking powder in a medium sized bowl. 2. using a fork or whisk, mix until thoroughly combined and no flour lumps remain. 3. melt 1tbsp of butter in a small frying pan on a medium heat. 4. place about 2tbsp of pancake batter per pancake in a circlular shape onto the pan.  5. lower the heat slightly and cook for about 5 minutes or until golden brown. 6. carefully flip over and cook for another few minutes. (the key is to cook for a longer time on a lower heat as these are quite thick and we don’t want them to be raw in the middle!). 7. repeat these steps with the rest of the batter. 8. meanwhile, place the blueberries and chia seeds in a small bowl and microwave on high for about 90 seconds. stir and leave to one side. 9. serve the pancakes whilst warm in a stack and top with a generous dollop of greek yogurt. 10. spoon over the blueberry jam and top with a handful of chopped pistachios. 11. finish with an extra drizzle of honey if you like… enjoy xxx🍋🫐 #pancakes #lemon #yogurt #breakfast #breakfastinspo
