@the_30_rule: Getting restaurant employees to follow standards consistently starts with removing every excuse for why they didn’t. “We got busy.” “We were short staffed.” “We didn’t have time.” Those things may explain what happened, but they can’t become permission to lower the standard. Real accountability starts with leadership making sure the expectation is clear, the training happened, the system is in place, milestones are set, and there’s consistent follow-up. Your job is to eliminate every legitimate reason not to execute until the only answer left is: “We knew what to do. We had what we needed. We chose not to do it.” That’s accountability. Because your standards matter most when things get busy. If they only exist when everything is going right, they aren’t really standards.

Saying “don’t give me excuses” all the time instead of, when your people are trying to tell you reasons why they are having a hard time meeting a standard because they need help eliminating roadblocks, is bad leadership too. We don’t lower standards, but if we aren’t hearing our people out on their roadblocks, we are telling them we don’t care about their feedback.
